DAVE'S BREAKFAST BURRITO!
Having enjoyed this morning delicacy on many trips to the USA I developed my own variation to feed my desire for them between trips (I've never seen them on a menu in the UK!).
For two medium-sized breakfast burritos you need:
three large eggs
80 -100g chorizo sausage (best to get a whole one - or a chunk - rather than the pre-packed sliced stuff)
70 - 80g mature cheddar cheese
2 x plain tortillas (the bigger the better!)
hot salsa (home made is best!)
Preparation is everything with these - although simple, things get frantic! Chop the chorizo into small pieces and grate the cheese. Put to the side. Take two tortillas and stick 'em in the microwave* ready to heat (20 seconds on full power should do it) - DON'T HEAT 'EM YET!
Beat the eggs with a fork and add salt & pepper.
Warm a small frying pan/omlette pan and add the chorizo (probably don't need any oil, but if the chorizo is very dry add little olive oil) - stir it around for a couple of minutes. Add the beaten egg and keep the lot moving around the frying pan. It's almost like making a cross between a chorizo omlette and scarmbled egg. Keep the egg/chorizo concoction moving around the pan to stop the egg setting into an omlette until the egg's cooked (only takes a minute or so). While
still on the heat, split the cooked filling into two heaps and sprinkle the cheese on top. Hit the start button on the microwave to warm the tortillas (or take them out the oven)...when the microwave 'pings' take the filling mixture off the heat.
Lay one tortilla flat and put half the egg/chorizo/cheese mixture about halfway between the center of the tortilla and the edge nearest you. Fold the edge of the tortilla nearest you securely over the filling. Then fold the sides to close each end that was left open by the first fold. Complete the burrito 'parcel' by folding the tortilla away from you until it is completely closed - the end result should be like a rectangular parcel. See photos opposite!
Let it sit for a couple of minutes to settle before serving with a dish of salsa (homemade is best!).
* if you don't use a microwave, you could wrap the tortillas in tin foil and warm them in the oven while preparing/cooking the filling.
